Whole starfish, five-armed and firm, with the green roe packed down each arm. Steamed briefly the arms open up and the roe is scooped out - a rich, faintly sweet delicacy.

• Whole starfish, roe in the arms
• Golden-orange arms, deep green roe
• Steam 8-10 minutes and scoop the roe; or braise in broth
• Keep frozen or well chilled
